i am a flexitarian

guys. this is a real thing. haha. i may be behind on this but i have never heard of it. i thought they just made the term up (well they kind of did), but i didn’t think it was real. sure enough, i have read several different articles about the flexitarian diet and see it more and more on the web. right now i would say we are flexitarians, which pretty much means you are a “flexible vegetarian”…as in you want to be a vegetarian but every now and then will eat meat (and in my case just chicken or turkey). i would say i have been this way for quite awhile now. we are working our way to becoming lacto ovo vegetarians (which don’t eat meat but eat dairy and egg products). with no meat dishes you do have to get creative with main entrees and tonight i tried a new recipe. it was delish! black bean-quinoa burgers. so i thought i’d share the recipe that i followed and encourage y’all to try the same!

(this might not look appetizing but it really is….and i forgot to take a pic of the final product.) ;)
easy to make but you do have to spend some time preparing. not too much though. added some bleu cheese and avocado on a toasted whole grain bun and you have an amazing dish!
*tip: i would add less water than what the recipe calls for when mixing the beans together (maybe 3/4-1 cup).

“love is in the air” bridal shower

a couple weekends ago i got to host a bridal shower for a dear friend of mine, ellen aka ellenor, who is getting married oh so soon! i had a lot of fun making the decorations and setting up the house. a big thank you goes out to her mom for taking care of all the food because that is just not my thing. ;) the theme was “love is in the air.” i tried not to make it look so much like valentine’s day, but that’s all about love too so we’re good. ;)  long story short, she and all the gals had fun….and she got lots of goodies.



i may or may not have used similar decorating ideas from miss P’s birthday party. but hey..it worked! ;)


these were my fav. they were fun and easy to make. cut out heart shaped felt, sew, stuff, glue. bam. heart stick. :) 

i think there will forever be glitter in my carpet from this sign. ;)


we were way excited to be writing out fun date ideas for her date jar! saw this on pinterest of course. i kind of want to make a jar for myself too. ;)

i had this at one of my bridal showers and it was soo nice! already addressed thank you cards? yes please!


that cake was massive and fabulous at the same time. the bride to be’s mama did awesome! oh and that chocolate fountain was a hit!!


ahh the gum game. again, i had this done at my shower and it was fun so clearly i had to do it to ellen. i came up with 30 questions and had her man answer them for me (and not tell her of course!). i printed them out, cut them into hearts and had everyone ask the questions to her. and for every one she got wrong…in went a massive piece of gum. i did let her choose which gum she wanted but i also said it had to be big. makes it more fun. let’s just say i had some difficult questions in the mix that i knew she probably wouldn’t get just to make sure she would have to stuff her face.

it was a simple but sweet shower for a sweet friend. i liked the dainty little details that were thrown in there. simple things such as doilies and cute vases always work. :) i am so excited for her wedding that is coming up real soon! love you ellenor! AND a big thank you to R & V who helped with the decor and set up. y’all are the sweetest. enjoyed our late night girl chats too. ;)

walk off the earth

i kind of had my own spring break from the web apparently. been out of town and just too busy to sit down and think. :) but i am back! had a great time visiting my family. even though miss P had a rough few days. :( poor thing had a fever and has been teething with all of her molars at once!! even took her in to make sure she didn’t have an ear infection or anything, thankfully she didn’t. and very thankful i have a loving/understanding/supportive family who helped me with her and also let me take a shower once in a while. ;) i also realized she might be like me and prefer the hot tub over the pool. i mean it is nice. :) (fyi: the water temp was set lower so the babies could have fun in there). we had a packed weekend with my niece’s first soccer practice, lots of bubble blowing, playground time, feeding the ducks and birds (P might have fed herself a piece or two), swimming, and lots of family time.




oh and i don’t think i’ll be traveling anytime soon during spring break. the usual 4 hour trip took us 7 hours! seven! well about an hour of that was us getting out and taking a break from the car. so we walked around target and played peek a boo in all the dresses. it was a much needed break for us. surprisingly miss P did great in the car. she was so excited to see her daddy when we got home. i was too. :) i will not be making a solo trip anytime soon that’s for sure. ha. i have a few blog posts lined up so hopefully i can get back in the swing of things. hope everyone had a great spring break!!

penelope and the slide

at our neighborhood park there is a little playground and p LOVES it. i do too. it’s a nice meeting place for all my mama friends too. :) this girl loves her slides. loved them for quite some time too. this one in particular because she can climb up the steps and go down the slide all by herself. such a big girl. i told her today that she needs to slow down with this growing up business. too fast! ….oh and she loves those rocks.
